Though Jan and John Walter have been farming goats since 1990, it was only in 2000 that the couple began hand-crafting cheeses and offering their stock of dairy products, including raw milk and yoghurt, to clients throughout New Zealand. The secret to their award-winning cheeses is patience: Jan and John faithfully oversee the production process from start to finish -- from selecting and milking the goats to ensuring each hand-molded batch is aged to perfection in the true artisan fashion.
